It’s been almost a month since I last posted, and a new post has been highly overdue. So, since July is almost over (WHOA!), I wanted to share with you, my readers, my homemade recipe of one of my favorite summer and anytime snacks- Pico de Gallo, also known as salsa fresca.
Pico de Gallo is a simple condiment, snack, and or topping that originates from Hispanic cuisine. It’s simple to make, delicious, and healthy to boot!
What you need to make it:
~A medium to large mixing bowl; cutting board; knife
~1 large onion (of your choosing- red or sweet onion, etc.) or 1 & ½ medium sized onions
~2-3 Jalapeños (depending on how much heat you want)
~3 or so sprigs of cilantro (the leaves and stems)
~½ of a lime
~2 large tomatoes or ~12-14 Roma tomatoes
[Makes about 1 Quart]
1- Cut up the onion, tomatoes, cilantro and jalapeños into bite size pieces and smaller. [Note- the seeds of the jalapeño give it their spicy kick! If you want your Pico de Gallo mild, take the seeds out.] Place them into a medium sized mixing bowl and gently mix together.
2. Add a dash of oregano- enough to lightly cover the top of the Pico de Gallo.
Take the lime half and crush or squeeze it- adding the juice into the bowl until there is no more remaining. (Some of the lime pulp can be added into the bowl as well, if you want more of a lime flavor).
Gently stir the mixture until the Pico de Gallo mixed evenly. Then, grab some tortilla chips and dig in! It’s that simple!
I really love this recipe, and it can be improvised when it comes to making larger or smaller batches, and you can adjust the amounts of the ingredients to your personal taste.
Note: You can also place the Pico de Gallo into the fridge (for leftovers, etc.), but be warned- as it sits into a container, the flavors will continue to strengthen.
